Turkey Breast With Raspberry Salsa Recipe
TURKEY BREAST WITH RASPBERRY SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Maxwell Estate in Grand Prairie, Texas in 1981.

Ingredients
  • 1/3 cup seedless raspberry jam
  • 1 tablespoon Dijon mustard
  • 1 teaspoon finely shredded orange peel
  • 1/2 cup mild salsa
  • 2-1/2 pound turkey breast half
  • Orange peel strips

Directions
  1. Stir together jam, mustard and orange peel then stir 3 tablespoons jam mixture into salsa.
  2. Cover and chill jam mixture and salsa mixture.
  3. Remove skin from turkey breast if desired then insert meat thermometer into center of breast.
  4. Arrange preheated coals around a drip pan in a covered grill and test for medium heat above pan.
  5. Place turkey bone side down on grill over drip pan then cover and grill 75 minutes.
  6. Brush occasionally with reserved jam mixture.
  7. Remove turkey from grill and cover with foil then let stand 15 minutes before slicing.
  8. Garnish with orange peel strips and serve.
