Bean Patties With Tomato Relish

- 15 ounce can kidney beans rinsed and drained shopping list
- 1 medium tomato finely chopped shopping list
- 1 small white onion finely chopped shopping list
- 1 green bell pepper seeded and finely chopped shopping list
- 2 cloves garlic finely chopped shopping list
- 3 tablespoons cornmeal shopping list
- 1/2 teaspoon dried oregano shopping list
- 1/2 teaspoon dried marjoram shopping list
- 1/2 teaspoon dried thyme shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- tomato relish: shopping list
- 2 medium tomatoes chopped shopping list
- 1 tablespoon finely chopped celery leaves shopping list
- 1 tablespoon finely chopped fresh basil shopping list
- 2 tablespoons extra virgin olive oil shopping list
- 1 tablespoon balsamic vinegar shopping list
- 1/2 teaspoon granulated sugar shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Mash beans with a fork and mix in the vegetables, cornmeal and seasonings.
- Form into 6 patties then fry in lightly oiled skillet until lightly browned on both sides.
- Combine all relish ingredients and stir to combine then serve over bean patties.
