Apricot-Orange Kugel

- 1 one pound package of egg noodles shopping list
- 1/2 cup of dried (sulfite free) apricots, cut into slivers shopping list
- 1 cup of chopped toasted almonds shopping list
- 3/4 sugar shopping list
- 1 stick of melted butter shopping list
- 1 lb. of sour cream shopping list
- 1 cup of small curd cottage cheese shopping list
- 1 tbsp of orange rind shopping list
- 1 cup of fresh navel orange juice shopping list
- 2 tsp of vanilla shopping list
- 6 large eggs, separated shopping list
- generous pinch of salt shopping list
- 1/2 cup of apricot preserves plus one tablespoon shopping list
- 1/2 cup of orange marmalade, plus one tablespoon shopping list
How to make it
- Preheat the oven to 350 degrees.
- Grease a 9 x 13 baking dish well with butter.
- Cook the noodles following the package directions. Don't salt the water for this dish.
- Drain very well.
- Toss them with the apricots and almonds.
- Beat the sugar, melted butter, sour cream, cottage cheese, rind and juice and vanilla until as smooth as possible.
- Beat in the egg yolds until thoroughly combined.
- Fold this mixture gently into the prepped noodles.
- Beat the egg whites until stiff with a pinch of salt.
- Fold these carefully into the noodle mixture.
- Gently pour into the baking dish.
- Bake for 45 minutes.
- Mix the apricot and orange marmalade and spread over the baked noodle kugel.
- Return to oven and bake for another 15 minutes to "glaze" the marmalade on top of the lucious creamy noodle goodness.
- let rest for 10 minutes. cut in wedges and serve warm.
- Or cool completely and enjoy just as much.
