Coconut and Lemon Pudding

- 125ml butter shopping list
- 380ml sugar shopping list
- 3 Large eggs shopping list
- 270ml flour shopping list
- 15ml baking powder shopping list
- 500ml Dry coconut shopping list
- 10ml lemon peel shopping list
How to make it
- Put the butter, half of the sugar, the eggs and 250ml low warm water in a bowl and mix.
- Mix the flour, baking powder and cococnut with the above.
- Poure in a microwave bowl.
- Put the microwave bowl on top of a plate that are put upside down in the microwave for 10 minutes on high.
- Take out of microwave and leave to stand for 10 minutes.
- Put the rest of the sugar, the lemon peel and 375ml water in bowl and microwave for 5 minutes on high.
- Take out of the microwave and pour over the pudding.
- Enjoy it warm or cold with custard or ice cream!
