Artisan Cheese Shops

  Over the last few years, we were finally catching up with the larger cities, in that we saw some artisan cheese shops spring up here locally. I was stoked, to say the least, as experimenting with different cheeses is one of my favorite pasttimes! I LOVE CHEESE! In the way the commercial says, "I love eggs" (but the rest of the ditty, though accurate in my ditty in my head about cheese, doesn't rhyme...), SO I was full of hope, and truly the cheese that is offered in this shop is great quality, from small, independent cheese producers, but the selection is limited, some cheddar, some blue cheese, some manchego types. Sigh, it is certainly understandable from a business point of view, but my thirst for adventure is not abated. And in the current economy, I fear that our little cheese shop will not survive. What are your thoughts along these lines, fellow Cheese Group members?
