When I make jellies and preserves, I use Sure-Jell for pectin. And there is a difference in the sugars that is used. I have always used C&H Pure Cane Sugar. This sugar comes from sugar cane and my jellies, gel real well. With other sugar brands, I have real soft jelly, those other brands are made from sugar beets or other sources with a high sugar content.

I never use pectin or gelatine or anything. JUST PLAIN SUGAR.
1 part sugar to 1 part fruit. THAT"S IT !
