Lost Grampa's recipe

  • elfingirl 15 years ago
My Grampa used to make a casserole with pork chops, potatoes, and cream style corn. It is a basically easy recipe, but just not sure what I am doing wrong. Mine is very bland.

Anyone else ever fix this? If so, what are the special/finishing touches I am missing?

    Thank you for your help.

    Pork Chop and Potato Casserole

6 large pork chops or boneless and skinless chicken breasts
    6 potatoes, sliced
2-3 medium onions, sliced 1/2" thickness
1 can cream style corn OR Cream of Mushroom soup
    1/4 cup water
    Salt and pepper
1 green bell pepper, sliced or chopped
Note: I like to add minced garlic or garlic powder to this and top the casserole with crushed potato chips mixed with 1/4 cup Parmesan cheese.

    Brown pork chops.
Place alternating layers of pork chops, potatoes and onions in a baking dish.
After first layer of pork chops, potatoes and onions is in place, pour half the creamed corn OR Cream of Mushroom soup over the top.
    Layer again.
    Season to taste.
Pour the remaining creamed corn OR soup over, then pour water over the top.
Bake, covered, for 1 to 1-1/2 hours at 350-375 degrees F.
    Crockpot or Slow cooker method:
Layer the same way in a crockpot.
Cook on low heat for 6-8 hours or on high heat for 4-5 hours.

This is a great recipe. I just happened to pop in and saw as one of the recipes posted to the group. That was so thoughtful of you to think of elfingirl. Thanks also for suggesting a meat alternative to use in the recipe. You got my 5 forks.
