Hi, stovies is a Scottish dish made from (usually) leftover boiled or roast beef, with extra beef fat, onions, gravy and potatoes. Foyboy, I think 'corned beef' means something different in the US than it does in the UK - there it's a cut of beef, like (say) brisket, salted and cured in brine then cooked, or sometimes cured, cooked and smoked, with spices, to form what we'd know as 'pastrami'. Here in the UK corned beef is also called 'bully beef ' - the meat is finely ground with added fat and gelatin, and comes in cans.

I have my own recipe for stovies, which uses leftover roast beef, which is as near as I can remember how my granny made it! I'm pretty sure you could make it with UK style 'bully beef' too - delicious!

    Hope this helps, guys!
