Coconut milk?

    Can I use coconut milk as a substitute for milk in a pancake recipe? I can't have dairy and just found out I can't have soy either, and was wondering if anyone has every tried using it in recipes, or what you thought about how well it would work. It is a buckwheat pancake recipe (1 cup buckwheat flour, 1 tsp baking powder, 2 Tbsp sugar, 1/2 tsp salt, [mis together and add to mixture of] 1 egg (beaten), 1 cup milk, 2 Tbsp melted butter or oil).

    I haven't used coconut milk but it would probably work fine. I usually use rice milk in place of cows milk or soy milk, and it works well in most recipes. You can also use water, although the flavor won't be the same.

    Absolutely!!! I use coconut milk for just about every milk type ingredient. I even prefer it to oil/water when baking! Yum!!!
