Peas

    Shell and wash peas. Boil in a large pot of water sufficient so the pea load will let the water come back to a boil quickly. I use a stock pot 3/4 full for 3 cups peas. Boil for 90 seconds. Immerse peas in an ice water bath for 90 seconds. Drain, bag and tag. Into the freezer.
    I use Zip Lock freezer quart bags and a straw to suck out air to prevent freezer burn.
    I put 3 cups peas in quart bags. You can use whatever size you wish. Just boil and cool for 90 seconds per batch.
