Freezing tips?

  • mamaclare 16 years ago
I am rather new here, just recently exploring. I have always made enough for today and the next, but now with a 2 year old, I really want to make fresh whole foods and on days I just can't muster the strength to put it all together, I would rather reheat something sumptuous previously made by ME... Anyway, I have done so, and it is good, but not nearly AS good... What's the best way to freeze stuff? Tools of the trade? Techniques? Anything would be appreciated, thanks!

good freezer bags are a must...
don't get the autmatic zopper kind...they let in air...which cause loss of flavour and freezer burn...
use traditional glad ziploc freezer bags...
voted best by america's test kitchen...

also- if freezing food in a container...place some saran wrap in direct contact with the food and then put the lid of the container on....

it's the air that you want to minimize...
this keeps the food fresher and tastier...

I have always been told to double bag the freezer items to prevent freezer burn. Squeeze all of the air you can out of the primary bag.

All my freezer items only stay there for a couple of weeks before being used and I have never had any trouble with freezer burn even though I use only one bag myself.
