    ~Made for Jan. 2019's "Casserole" recipe challenge~

    Apple Crisp by Shandy

    I wanted to make at least one dessert casserole this month, and this was delicious!!
    I like that it makes a large 9x13" dish too, as there never seems to be enough for my family!
    The topping is very similar to my usual recipe but this has baking soda and baking powder in it. And it bakes up and tastes just like an oatmeal cookie! It's crisp, yet tender and chewy underneath. I did use old fashioned oats instead of quick cooking. It's all I had in my pantry, but I also prefer the taste and texture of large flaked oats.
    I used sweet gala apples for this, so I reduced the sugar by half (in the apple portion only). As I was peeling them (I have an apple peeler, corer, slicer-- all-in-one device) I noticed how juicy they were so I added an extra tablespoon of flour and it worked out great. The ten cups of sliced apples worked out to 12 med-small gala apples.
    The topping amount was perfect for the amount of apples. I like a little more apple to topping and this was perfect!
    A delicious recipe that's sure to become a new favorite!

    Haha, I did serve it with ice cream! But I took this photo in the morning for better light and didn't want to eat ice cream for breakfast. ;)
