    Apple Feta Tossed Salad by Pleclare

    ******You have got to save this recipe just for the Dressing!******

    The Dressing is so good, it's beyond 5 stars!! Seriously, that good!---try it!!! It would go with any tossed salad, Greek salad, roasted vegetables etc..

    The salad itself is good too, it grew on me the more I ate it. But I think the feta over powered the apple, walnuts and cranberries. So next time I would sub the feta for cubed cheddar cheese. Or perhaps a milder feta would do. I used the authentic brined feta, but the pre-shredded stuff tends to be more mild and not as salty. So that would probably be better.

    The Dressing is the absolute star of this recipe! I followed the dressing recipe to a T! For the onion I used the whites of two large green onions, I think a small shallot would be nice too. And blended it in my Magic Bullet, it surprisingly stayed emulsified the next day too.

    You gotta try the Dressing if nothing else!

    We had this again, and this time I crumbled the feta finer and left out the cranberries and we loved it! We were talking about bottling that dressing and getting rich off of it, Lol! ;) ;)

    I love Dijon vinaigrettes and seeing how much Shona loved the dressing and knowing I loved all the ingredients I too made this salad for IMI2's September 2018 "Apple" recipe challenge and was not disappointed. It's Delicious!!

    My review: "I love Dijon vinaigrettes, love Feta cheese, and love all the other ingredients in this salad. Everything complimented each other well. I didn't have dried cranberries so I left them out, added a few carrot slices and a little red onion. Delicious!!!"

    I made more of the dressing yesterday to go with Greek salad----it was divine! :)
    I forgot to mention above that for the mustard I used Frenchie's Bold & Spicy, it's a whole grain deli style mustard--it's our favorite mustard! :)

    I too love the dressing Shona!! It's so nice to have measurements. Most times when I "whip up" a vinaigrette it has too much of something or not enough of something else. This one is perfect and I too can see myself making the dressing often. It was so easy to put the ingredients in the plastic jar thingy that came with my immersion blender … zing, zing, zing … and it's done.

    I joined the Apple Feta Tossed Salad band wagon and made it up for hubby and I last night alongside our dinner.

    Every single time I get caught by that lack of a dash in the Servings box. :( Yep, I read that the salad served 13 and it doesn`t even tweak my brain initially that that is odd. LOL. So I decided I should quarter the dressing recipe. Yep, I did that. Then when I see how much dressing it made it FINALLY dawned on me that I had misread the servings AGAIN. LOL. So then I tried to doctor it back up. In the end it was a tad sour and I should have had a wee bit more sugar in there but it was totally all my fault.

    I always crumble my feta small as I don`t care for big chunks of it and I liked it with the apple. I loved the Craisins in this and the walnuts. I had a bit of Boston lettuce on hand and then topped it up with some baby spinach leaves. We used a MacIntosh apple off of our tree. They are not quite juicy and sweet yet but they`re getting there.

    I think this would be a nice salad recipe to serve at Thanksgiving because of the apple and dried cranberries. Very much enjoyed it and the dressing is a nice one. Will totally make again.
