Apple Pumpkin Coffee Cake

    Apple Pumpkin Coffee Cake by Bren

    This was great! I can see how this would make a great loaf too. I did use a Bundt pan and I liked how it made a smaller cake than the usual Bundt cake size. (it was about half the size and the batter would probably fit into a standard muffin tin too)
    It would be perfect served plain for coffee time, however I made it for our Thanksgiving dessert last weekend.
    I was going to make an icing or cream cheese frosting for it, but decided to dust it with powdered sugar and serve it with two options. Whipped cream and caramel sauce. The whipped cream was great with it and far better than a pumpkin pie in my books! ;)
    The caramel drizzle was nice and rich and went very well with the autumn flavours of the cake.
    I used vegan margarine instead of shortening, (the hard baking sticks not the soft margarine). The only thing I'll do differently is add more apple, I couldn't really taste it so perhaps I'll add two apples. The bites without apple were still great, and you could probably leave the apple out or sub with other add-in's like chocolate chips, raisins, cranberries etc...And I'll leave out the nuts next time since my kids just picked them out! :P

    Beautiful picture Shona! The recipe looks good, nice cake to go with coffee/tea for breakfast and even after dinner. I like the slice size using the Bundt pan, looks ideal!

    Wonderful photo, Cosmicmother! I always like coming here first thing in the morning with a cup of coffee. The pumpkin cake looks yummy! I think you made the right choice dusting it with powdered sugar.
