How to make it

  • Preheat oven to 350.
  • Cream together the shortening and sugar. Beat in the egg and pumpkin.
  • Sift together the dry ingredients and add to pumpkin mixture alternately with buttermilk.
  • Stir in chopped apple and walnuts.
  • Put into a greased and floured bundt pan.
  • Bake in a preheated oven for 40-50 minutes.
  • Invert and cool on rack. May be iced with cream cheese icing or dusted with icing sugar.

    This was great! I can see how this would make a great loaf too. I did use a Bundt pan and I like how it made a smaller cake than the usual Bundt cake size. Perfect for coffee time, however I made it for Thanksgiving and served it with whipped cream and caramel sauce-- very good that way and far better than a pumpkin pie!

    eastcoaster ate it and said...
    Delicious!! Made this today but i made 2 loaves instead of a cake. The aroma of these loaves baking was mouthwatering and i could not wait till they cooled.When they were done i flipped one out and cut a slice off, and it was so good. I did change a couple of things, i used gluten free flour, and for the buttermilk i replaced it with lactose free milk with some lemon juice in it.They are so moist even with the changes, and the directions and cook time was spot on. This is a keeper, thank you Bren for a delicious way to use pumpkin.
