Asparagus Salad with Feta

    Asparagus Salad With Feta/saved
    for the May IMI11 Challenge and as a side to our grilled shishkebob dinner last night.
    This was super good.

    I found the instructions a little vague at times. The recipe says that it serves 46 which puzzled me initially but then I realized that Grinchgirl must have meant 4-6 people. LOL! The recipe called for 2 bunches of asparagus and that's always a tricky thing as 'bunches' tend to come in a lot of different sizes. However....I was just making this for hubby and I, so cleaned and steamed perhaps 12 stalks of asparagus. I cooked the asparagus in the microwave for one minute. I pretty much just halved the dressing ingredients.

    I used about a half tsp. of minced garlic, and I minced half of a small shallot. I used 1/2 tbsp. balsamic vinegar and 1 tbsp. white vinegar and grainy mustard. The mustard I used is from a local company called Mrs. McGarrigle's Mustard. "Chipotle Lime" was the flavour.
    The recipe didn't say how much olive oil to add so I poured in about 2-3 tbsp. along with the salt and pepper. Cut some cherry tomatoes in half and crumbled a wee bit of feta.

    Both hubby and I really liked this. My favourite part was the mustard seeds in the dressing. They sort of pop when you crunch them up in a bite with the asparagus and it's a fun texture.

    Will totally add this to my "Made and Loved" file. Thanks Grinchgirl for a yummy new salad recipe.

    Thanks guys. I hated asparagus growing up Shona but that's because my Mom had only served me it out of a can. Bleck. Shudder. When I finally tasted 'real' asparagus it was a whole new experience. Now it's probably my favourite veg....after tomatoes.
