    A perfect dessert for St. Patrick's Day!!
    It's a simple no-bake cheesecake. It's light and airy with a delicate flavour of Irish crème and chocolate.
    I used vanilla wafers for the crust (Nabisco NIlla wafers). And only used 1 lb of cream cheese for the filling. The recipe calls for 1 lb plus 5oz, but I only had the two bricks of cream cheese. Thankfully it turned out in the end and I didn't have to adjust anything else in the recipe!
    I used a Shamrock stencil and dusted the top with cocoa powder, and served it with a little whipped cream. But it's so light and flavorful you really don't need the extra cream.

    **For those who want the recipe broken down in US-Cups, here's what I used:
    Crust-
    2-1/2 cups of cookie crumbs (I whole box of nilla wafers crushed is 2-1/2 cups)
    7 Tablespoons of Melted Butter
    Filling-
    1 lb, two bricks of cream cheese (to use all the cream cheese in the recipe add 2-1/2 bricks)
    1 cup Icing sugar
    2 Tablespoons of Bailey's
    300 ml's of whipping cream, works on my measuring cup but it's 1 cup plus 3 T's
    I used 1 Cadbury Milk Chocolate bar (300 gram/ 3.5 ounce chocolate bar)
    Garnish-
    200 mls of whipping cream is just shy of a US cup.

    Michelle, I was a little worried too and didn't know if I should use less whipped cream. But then you are folding the whipped cream into the cream cheese--the cream cheese stabilizes the whipped cream so I don't think you can go wrong with the amount of cream cheese! But I did check online and found some similar recipes that used 1 lb of cream cheese to the same amount of liquids so I felt more comfortable chancing it, lol ;)
