Baked Potato skins

    Baked Potato Skins/saved
    as part of dinner last night. Served them as a side to grilled tenderloin steak and a plate of sliced tomatoes and avocados. They were great. Guys would LOVE these as a Super Bowl appy. Well....girls too of course. LOL.

    I just used two potatoes since it was just for hubby and I but after looking over the comments just now on the recipe page I see Frankieanne used her leftovers the next day and served scrambled eggs in them and that's an awesome idea so I hope I remember for next time.

    I actually used the amount of Parm, garlic powder and olive oil that the recipe called for on my two potatoes, but there would have been enough for four. I just REALLY coated them. :) Neither hubby nor I care for sour cream so I didn't bother with that. I used store bought real bacon bits as opposed to cooking up bacon (cheat...ssshh) :), and I sprinkled chopped green onions on the top of the potato skins before warming them up in the oven.

    These are nice because you can totally prep them all before hand and then just warm them up and melt the cheese at the end just prior to serving. I did only heat the oven to 350F because that's just what I normally cook at.

    They look delicious!! I used to eat potato skins all the time when I was little at this Mexican food restaurant we went to all the time. Brings back memories :) I also love FA's idea of serving scramble eggs in the leftover skins!
