Ingredients

How to make it

  • Preheat oven to 450
  • Cut potatoes in half lengthwise
  • Scoop out pulp, leaving a 1/4 in. shell
  • Place baking rack on lined baking sheet
  • In mixing bowl, combine oil, Parmesan cheese,garlic powder, salt and pepper
  • Brush over both sides of skins
  • Bake 6-8 minutes then turn over and bake for 6-8 minutes more.
  • Sprinkle bacon and cheddar cheese inside skins
  • Bake until cheese is melted
  • Top with sour cream and onions

    Finally tried this recipe out last night. Used it as a side to BBQ steak and some sliced tomatoes and avocados. They were very yummy and I'll totally make them again. Brushing them with the mixture of parm, olive oil and garlic puts them over the top. Nice recipe Corinne! More in IMI.

    I made these last night - my first potato skins. They were really yummy! I don't care for sour cream so I left that off.

    Made these last night and they were a huge hit!! A great recipe. Bryan wolfed down 3 of them, and I had these huge baking potatoes that I used! lol I didn't take a pic since you have good ones, but, mine looked exactly like yours.

    Similar recipe for having already baked potatoes is twice baked potatoes. Using your process for cooking the skins, save the potato scopped out and mix butter, milk, cheese, bacon and salt n pepper. After skins cook using a pastry bag with large tip squeeze the potatoe ontop of the skins then top with more cheese and bacon and dust with seasoning salt. cook another 8 min in oven. Very elaborate delicious treat! I havent made them in a while. Next time I do ill post up the recipe!

    To shorten your cook time dont even bother Baking the potatoes. They cook all the way using 8 min on each side. just important u keep them 1/4 inch thick.
