    This is a great recipe. Made them yesterday and they were awesome. One of my favorite bar foods! Have ahd some great potato skins at various restaurants when we travel with some really cool toppings, so I can't wait to play around with that aspect of it. I had 4 big baking potatoes, which made 8 of them, and Bryan ate 3 at supper last night! There were 3 left when I came to work this morning, but, he's off today...I'm hoping there will be 1 left for me tonight! lol I didn't take a pic since you already have 2 good pix there. Mine looked just like yours. Thanks for sharing!

    Frankieanne, I think russets or idahoes either one. They need to have a "hearty" skin. I don't think red potatoes or yukons would work as well.

    I made these last night. Unfortunately, my electricity went off a couple of minutes after I flipped them over so I had to rely on the residual heat to finish them up and melt the cheese. I don't think they came out as crispy because of that but they were still really good and I was happy to have dinner! Added my picture, too. Thanks, wynne! Used the potatoes I scooped out to make this:
