Ingredients

How to make it

  • 1. Cook the spuds the way you usually would for mashed potatoes.
  • 2. While the spuds are cooking, wash & chop the spinach.
  • 3. When the spuds are done, drain & return to the pan.
  • 4. Quick as you like, add the spinach, butter, milk & cheese.
  • 5. Mash the spuds until smooth. You may need to add a bit of milk here.
  • 6. Add the salt & FG pepper and stir.
  • 7. Cover & let sit a few minutes.
  • 8. Serve.
  • If you really have to have your spinach cooked more than the hot potatoes are going to do you can steam it a bit before you add it to the spuds. Actually, I wouldn’t have minded having a bit more spinach with this. So, if that thought has crossed your mind, go for it.

I absolutely loved this! Loved the bit of crunch of the spinach with the potatoes. Made it exactly as written and it came out wonderful. Added my picture. Thanks so much. More at DT's posted link.

I made this as a side dish and then remixed the leftovers into a shepherd's pie. We enjoyed it both ways very much. Thanks, RJ! More at Pomme De Terre, Pinard Et Fromage Potatoes, Spinach And Cheese.

Wow ... we sailed to Apia a few years ago and reprovisioned at a small grocery store near the yacht check-in area. We found wonderful New Zealand products as well as freshly baked breads, etc. We really enjoyed WS and had an especially notable visit to RLS's Vailima! Thanks for this recipe from Apia, Elgourmand!

You call it uninspired but I'd call it delicious! Will have to try it next time I get some spinach. Thanks, RJ.

This looks very interesting. I never would have thought of putting spinach into mashed potatoes. Sounds like a great combination.
