    ***January 2019 Casserole recipe challenge***

    This is really, really good! A meal the entire family will love. A perfect way to use up spaghetti squash and ideal for anyone looking for a gluten free or grain free dinner. I had to adopt a grain free lifestyle and miss some of my favorite foods like pasta and pizza. Spaghetti squash is a good substitute for some of those things.

    This recipe does not really specify amounts. Spaghetti squash can vary in size and so can jars of pasta sauce. That tells me I am free to make this however I want. I used all of the ingredients listed and just winged the amounts. I used 1.5 lbs of already cooked spaghetti squash that I had on hand. I mentioned pizza above. That’s because I had homemade pizza sauce in the fridge so I used that instead of spaghetti sauce. About 2 cups. Since I was going down the pizza road, I added sliced black olives. Cheese! You can never have too much cheese. I doubled the amount and put 1 cup in the mixture and ½ cup on top. I could not get this to fit in my large glass casserole dish so I put it in a 9 x 13 pan.

    Yes, it tasted like pizza!

    Great photo DIZ! It looks so good and easy. Ruby Tuesday's restaurant use to have something like this on their menu (without the sausage) and I loved it! If they offered sausage I so would have ordered it with it. YUM!!

    I live the sound of this recipe DIZ, and what an amazing pic.!! I try the eat gluten and grain free as well. It just makes me feel better. Glad you got the amounts figured out, sounds like it turned out perfect :)

    Thank you, Mommyluvs2cook! I've also had to go sugar free. Being grain free and sugar free has really made a huge difference in my overall health. Haven't felt this good in 25yrs! Never would have guessed those things could have such an affect on the body.
