Balsamic Thyme Grilled Shrimp

    JUST UNDER THE WIRE.......my contribution to the IMI11's February Valentine's Day Food Challenge. :) Last night I made a most lovely appetizer for Hubby and I.
    Balsalmic Thyme Grilled Shrimp
    from Smittenmoose.
    I don't think I've ever had Balsamic with Shrimp before and because I LOVE Balsamic, I really enjoyed this recipe. Since there was just the two of us and I was serving this as an appetizer and not a main, ( the recipe calls for one pound/40 shrimp) I just thawed a dozen shrimp and halved the marinade recipe. I had lots of marinade but it was too much of a pain to try to quarter the recipe. No worries.
    I could certainly taste the balsamic and the garlic but I couldn't discern any hot pepper flakes.
    Hubby gobbled them down in an instant. I used dried thyme. Fresh would be better.
    I just broiled these but they would be really lovely grilled as they'd get a nice smoky flavour to them. I'll do that for sure next time.
