Balsalmic Thyme Grilled Shrimp Recipe
One night I forgot to take dinner from the freezer. I had a bag of shrimp and it was quick to defrost. So I went from pantry to garden tossing together whatever I thought would go together.

Ingredients
  • 1 pound deveined peeled medium shrimp (about 40 per pound)
  • 1/2 olive oil
  • 1/4 cup balsamic vinegar
  • 3 cloves garlic, chopped
  • 1/4 teaspoon red pepper flakes
  • 1 tsp dried thyme or 1 tablespoon fresh
  • 8 wooden skewers soaked in water

Directions
  1. Place all ingredients in zip top bag and marinate 30 to 60 minutes.
  2. Skewer 5 shrimp per skewer
  3. Grill over high heat 2 to 3 minutes per side until shrimp have turned a pretty color of pink.
  4. Serve hot
  5. For an appetizer serve one skewer per person, for a main course 2 skewers.
