Banana Gingerbread

    Banana Spice Minicakes by JoJoBa

    I made a loaf instead of the minicakes so I decided to change the title... ;)
    I saw a recipe for Banana Gingerbread on a blog the other day and decided to search here for a similar recipe and came across this. I've never heard of a banana gingerbread before and knew I had to try it. And since I had bananas to use up, this was perfect!
    And WOW, super delicious recipe--it far exceeded my expectations. I thought maybe the banana would over power the gingerbread or vice versa, but it's a perfect marriage. You get the flavour of both!
    JoJoBa mentions in her description that this is a take on a loaf recipe and posted this link: http://bakingbites.com/2007/11/banana-gingerbread .....So I used the bake time from that, and it took an hour in my oven.
    Also from the original recipe I used the ground ginger (1tsp of dried vs 2T fresh) and took the option to sprinkle the top with raw sugar--which gives it a nice crunch and sparkle. (the original recipe uses all molasses but Jo's uses half molasses and maple syrup so I stayed with that)
    For my own taste, I swapped the amounts of nutmeg and cloves (using 1/2 tsp of nutmeg and 1/4 tsp cloves rather than the reverse) With that change, including the dried ginger, I found the spice amounts perfect and super delicious!
    This recipe has no eggs, so if you found a vegan sub for buttermilk this could be vegan ( I didn't have buttermilk on hand so I used Greek yogurt that I thinned out with milk). I had no whole-wheat flour this time, so I used 1-1/4 cups of all-purpose flour for the 1 cup of ww flour.
    This would make a great breakfast loaf for visitors during the holidays, it smells like Christmas while baking!! I did let it cool completely before trying. I find molasses breads taste better at room temp, though I do love fresh from the oven banana bread--- I didn't trust trying it warm because of the molasses.
    I'm sure it will taste even better tomorrow. The whole family loved it and I can't wait to make it again! :)

    I almost made this recipe from Pleclare: Molasses Banana Bread. But it has no spices in it so I went with JoJoBa's. I'm sure that's a good recipe too, and you can add whatever spices you like to it to suit your taste.. :)

    It`s beautiful Shona. Love your first photo especially. I`d never heard of a marriage between bananas and gingerbread before. Sounds very nice. Thanks for bringing it to our attention. I thought I was pretty much done with Christmas baking, but this might have to be made as well as we have company arriving on the 28th who are banana loaf fans and this would be perfect. :)

    Thanks Linda! We thought the same thing, it's a lovely take on banana bread and something different to have once in awhile. It almost has a banana-y caramel taste to it, then the spices come but not overpowering-- just the right amount that compliments the banana so well. I highly recommend trying it! :)

    This time using the whole wheat flour called for, and it's just as delicious as I remember! I did a loaf again and used the same spices as in my original post. Perfect use of ripe banana's during the holidays.
    We will have this for our Christmas Morning breakfast as well.
