How to make it

  • Preheat oven to 350F. Lightly grease a mini-muffin pan.
  • In a large bowl, whisk together flours, baking powder, baking soda, salt and spices.
  • In another bowl, beat together brown sugar, banana, fresh ginger, molasses, maple syrup, buttermilk and oil.
  • Pour into the dry ingredients and stir until just combined.
  • Bake 15 minutes, turn out immediately and cool on a rack.

    This is an exceptional recipe, I love it!!
    I made a couple changes I want to note for next time:
    I used 1 tsp of dried ginger instead the 2 T fresh, and I switched the amounts for nutmeg and cloves (so 1/2 tsp nutmeg and 1/4 tsp cloves).
    I wanted a loaf so I baked it in an 8.5" loaf pan for 1 hour. I took tips from the original recipe (link posted in the description) and sprinkled with raw sugar.
    This time around I didn't have whole wheat flour so I used 1-1/4 cups of all-purpose flour for the 1 cup of whole wheat called for.
