    Barbeque Shrimp
    Made for IMI2’s August 2018 “Grill” Challenge.

    Easy and delicious and I am not a fan of hot shrimp dishes (I like shrimp chilled with cocktail sauce). It was a little tricky getting the bacon secured around the shrimp but other than that it was easy and incredibly tasty! I thought for sure the shrimp would have dried out before the bacon cooked but they didn’t, the bacon kept them nice and tender. I would make this again in a heart-beat.

    Look at those shrimp! They just want to jump right off the screen. Great lighting! You must be enjoying your new camera. I've made bacon wrapped shrimp before, but never tried to thread it on a skewer and grill. Sounds tricky. Nice to know the bacon cooked along with the shrimp. I would have thought the same as you and afraid the shrimp would be overcooked.

    I did precook the bacon a little first and it shrunk so much I couldn’t wrap the shrimp and had to toss the bacon. Next round I just cut and wrapped and went for it. The bacon was nice and done where it laid flat on the grill but chewier where it didn’t (the inside curve of the shrimp). Next time instead of using skewers with a few shrimp I’m going to try individually doing them with toothpicks and see if I’m able to sear the bacon all the way around. Hope that helps Cheryl.
