    ***October 2018 Group Recipe Challenge--Oktoberfest***

    Bauernfruhstuck (German Farmer’s Breakfast) is one of my favorite German dishes. This one is quite different from my recipe so I thought I’d give it a try. I only used half the amount of potatoes and tomatoes. Used 4 eggs instead of 3. Topped with cheese. I did not mix it as it cooked. To speed up the cooking process, I covered the skillet with a lid. The potatoes made a crispy crust along the bottom. Tasted like shoestring potatoes.

    Thank you, Chuckieb! I've always scrambled it as it cooks to keep the eggs from burning on the bottom. Since this one had sliced potatoes layering the bottom of the skillet, I decided to follow the directions. We liked the crunchy potatoes. It gave it texture.

    Wonderful photo DIZ! This really is a good hearty meal for anytime, just not breakfast. I'm parcooking more potatoes this morning because even DH likes this and asked for it again. I just love how it's so forgiving and you can add or take-away what you want.

    Thank you, LindaLMT! I agree this is an anytime meal. We had it for dinner last night. The only time I can get away with breakfast for dinner. lol!
