How to make it

  • Boil unpeeled potatoes 30 minutes. Rinse under cold water, peel and set aside to cool. Slice potatoes.
  • In a large frypan cook bacon until transperent. Add the potato slices; cook until lightly borwned.
  • Meanwhile blend eggs with milk and salt. Stir in the cubed ham. Cut the tomatoes into thin wedges; add to the egg mixture. Pour the egg mixture over the potatoes in the frypan. Cook until the eggs are set.
  • Sprinkle with chopped chives and serve at once.

    This is very good. As a matter of personal taste, I made changes to the ratio of ingredients. Halved the amount of potatoes and tomatoes. Used 4 eggs and topped with cheese. For a more detailed review, see “I Made It II:” Bauernfruhstuck Farmers Breakfast

    We made this dish this morning. It is easy to make. All along I thought three eggs was going to be too few and in the end, we kept that thought. While a hearty breakfast, more egg and less potato would have worked for us.

    The flavors are good. We enjoyed it.
