Hearty farmers breakfast, I like to top mine with shredded cheddar cheese as well.

Ingredients
  • 4 x Potatoes, Medium
  • 4 x Bacon, Strips, Cubed
  • 3 x Eggs, Large
  • 3 tsp Milk
  • 1/2 tsp Salt
  • 1 cup Ham, Cooked, Small Cubes
  • 2 x Tomatoes, Medium, Peeled
  • 1 tsp Chives, Chopped

Directions
  1. Boil unpeeled potatoes 30 minutes. Rinse under cold water, peel and set aside to cool. Slice potatoes.
  2. In a large frypan cook bacon until transperent. Add the potato slices; cook until lightly borwned.
  3. Meanwhile blend eggs with milk and salt. Stir in the cubed ham. Cut the tomatoes into thin wedges; add to the egg mixture. Pour the egg mixture over the potatoes in the frypan. Cook until the eggs are set.
  4. Sprinkle with chopped chives and serve at once.

We made this dish this morning. It is easy to make. All along I thought three eggs was going to be too few and in the end, we kept that thought. While a hearty breakfast, more egg and less potato would have worked for us.

The flavors are good. We enjoyed it.

Alterations


We think doubling the eggs would make this dish more breakfast-y. In addition, my wife suggested cheese. She likes cheese on things, but I concur it would have worked well with this.
