Hearty farmers breakfast, I like to top mine with shredded cheddar cheese as well.

Ingredients
- 4 x Potatoes, Medium
- 4 x Bacon, Strips, Cubed
- 3 x Eggs, Large
- 3 tsp Milk
- 1/2 tsp Salt
- 1 cup Ham, Cooked, Small Cubes
- 2 x Tomatoes, Medium, Peeled
- 1 tsp Chives, Chopped
Directions
- Boil unpeeled potatoes 30 minutes. Rinse under cold water, peel and set aside to cool. Slice potatoes.
- In a large frypan cook bacon until transperent. Add the potato slices; cook until lightly borwned.
- Meanwhile blend eggs with milk and salt. Stir in the cubed ham. Cut the tomatoes into thin wedges; add to the egg mixture. Pour the egg mixture over the potatoes in the frypan. Cook until the eggs are set.
- Sprinkle with chopped chives and serve at once.

We think doubling the eggs would make this dish more breakfast-y. In addition, my wife suggested cheese. She likes cheese on things, but I concur it would have worked well with this.

We made this dish this morning. It is easy to make. All along I thought three eggs was going to be too few and in the end, we kept that thought. While a hearty breakfast, more egg and less potato would have worked for us.
The flavors are good. We enjoyed it.
