Beef and Cabbage Stew

    Beef And Cabbage Stew by Lor

    A wonderful Stew, loved it!
    It's like a cabbage soup meets beef stew. You know, that "Cabbage Soup Diet" soup, that's what it reminds me of. I do like that soup too! :)
    The directions are sparse, so I'll write what I did here:
    I floured and browned the beef as instructed, and the recipe calls for boiling water or stock (or mixture there of) so what I did was add a carton of beef stock (added water later to make up the 5 cups called for) to a large pot and brought that to a boil with the canned stewed tomatoes, cabbage and carrots (calls for 5 carrots, I used 3 x-large ones). Meanwhile, I added some salt, pepper and paprika to some flour and tossed the beef in there and browned it in two batches in a skillet--adding the browned beef to the pot. (Salt, pepper and paprika are called for in the recipe, but only to add to the stew).
    Once the beef was browned, I added the onion and sautéed for a few minutes before adding the garlic and remaining salt, pepper and paprika (I like to bloom spices and garlic in oil rather than just dumping it in liquid). Then I added the lemon juice, Worcestershire, tsp. of sugar and remaining water, to clean up all the beefy bits in the sauté pan. (Instead of the hot sauce called for I added a pinch of cayenne with the other spices)
    Once I added that to the pot with the bay leaf, I simmered it partially covered while peeling and chopping the potatoes. I used Yukon potatoes that I diced, about 6 small to medium ones. Once I had 4 chopped potatoes in the stew, it looked like it would be very, very thick. I thought about leaving the other two potatoes out but since I peeled them already I threw them in with a little extra water. Once the potatoes were in I simmered it for about 45minutes until the potatoes were cooked through. It probably took just over an hour to make all together. (One reason it seemed very thick was because she says you can add a can of Guinness to the stew if you want, so it probably just needs that extra liquid at the end)
    It was delicious and smelled so good while cooking! Everyone loved it and had seconds. I could see adding celery or peas, maybe even some herbs, but as-is it was still delish! I'm thinking for a change up some barley would be great instead of potatoes, or for a vegetarian option some lentils instead of beef. :)

    That's a good looking bowl of stew, Cosmicmother! Nice photo! I saved this recipe earlier and was thinking about making it. It looks really good and one that would have a lot of flavor. I think your consistency is perfect. In my opinion, stew is supposed to be thick. Too much liquid and you have soup.

    Thanks Linda! I think you'd really like this if you like the dieter's Cabbage Soup. Cutting the recipe in half would be really easy too, as it does make a big batch--probably 10-12 cereal bowls worth. I see Lor wrote 6 servings and she must have big eaters in her family too as that's exactly how many servings we got! ;)

    I was thinking about making it, but changed my mind. DH isn't a big cabbage fan and we are ready to move on from hearty Winter comfort foods. I'll try it this coming Fall/Winter.
