Beef Stew Slow Cooker by Jones2888

A great tasting, simple stew recipe. I love the paprika and Worcestershire sauce in this. I'm used to herby stews with thyme or rosemary, but I really liked the flavor in this one too.
I followed everything to a T except the beef broth amount. It only calls for 1-1/2 cups, but that barely coated the bottom of the crock pot. (I used a 6qt oval). So, I doubled the broth and it barely covered all the vegetables. There's a 1/4 cup of flour in this, and even with the doubled broth it made for a thick gravy like stew.
The picture I took was after it cooked for 4 hours on high. After returning the bowl of stew to the pot, I added a handful of peas and cooked it on low for 1 more hour, stirring frequently and releasing some of the steam. The stew went super thick and starchy from the potatoes. You could easily stand a fork up on it. I should of taken a photo of it then, but it was too dark.
So just note that even with the doubled broth it will go very thick and gravy like, and much thicker than this photo. We got four of those sized bowls out of this recipe as it was so thick and mounding. (cereal size bowls). Perfect with biscuits on the side!

I'm surprised the recipe didn't call for searing the beef first to bring out color and flavor.

Nice picture Shona! I find most stews don't call for enough broth for us, I know that stew are supposed to be thick, but I like a little broth to them. Looks really good though!!

Points, it does call for searing the beef. But you coat it in flour first, then saute in oil. I found that didn't do much for the stew, as it didn't call to cook the onions in the pan afterwards or deglaze the pan with any liquid to pick up the extra flavor. The beef stew meat had lot's of moisture in it and the flour soaked that up in the pan but it didn't seem to brown on me, just steam.

    Thanks Michelle! :)
Yeah, me too, you gotta have some gravy for dipping biscuits, or toast etc.! ;)

That is not a recipe for searing. It is a method for coating the meat in order to make gravy.
