    **September 2017 Fresh Vegetable Group Recipe Challenge**

    I hope to score extra credit with this meal. It’s all fresh from the garden!—peppers, potatoes, green beans, and I even canned my own stewed tomatoes using garden fresh tomatoes.

    We have mixed reviews here. I like stuffed peppers, but my hubby loathes them. Unfortunately, this recipe did nothing to change his mind. We both liked the meat filling. I used 50/50 ground beef and venison. My peppers were smaller so it made 6 stuffed peppers. I thought the sauce made with stewed tomatoes would be a welcome change from the standard can of tomato sauce. It really washed away during cooking and there wasn’t much of a tomato flavor. I made one mistake and only cooked them for an hour because the meat was well done. Unfortunately, the rice and peppers were not completely cooked. I really needs the full 90 minutes and it wouldn't have hurt the meat one bit. I froze the leftovers. When I reheat, I’ll put them in tomato sauce and cook them longer. I'm confident they will be better the 2nd time around. :)

    Too bad it didn't turn out the way you liked, but I bet your tweaks will make it better next time! My first thought was to add tomato paste instead of ketchup? But I guess the ketchup adds a little sweetness; so tomato sauce sounds like a good idea!
    Hopefully the leftovers are much better :)

    Thank you, Cosmicmother! I took all of my camera stuff to the attic when we had family for Easter dinner. Just haven't felt like bringing it all back down. The lighting in this house is really poor so I need the extra lights and props to cover up the ancient counter top. lol! Ketchup based sauces are very popular in this area. My mom put ketchup all over her stuffed peppers, meatloaf, in BBQ, etc. I'm not as big on ketchup as I used to be, but still prefer it over things like meatloaf.
