Beef-Stuffed Peppers

- 1 Pound ground beef shopping list
- 4 Medium green, red or yellow bell peppers shopping list
- 3/4 cup chopped onion shopping list
- 1/4 cup uncooked regular white rice shopping list
- 3 tablespoons ketchup shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon dried oregano shopping list
- 1/4 teaspoon pepper shopping list
- Sauce: shopping list
- 1 can 14-1/2 Italian style stewed tomatoes, undrained shopping list
- 1 tablespoon ketchup shopping list
- 1/2 teaspoon dried oregano shopping list
How to make it
- Heat oven to 350 degrees F, cut tops off bell peppers; remove seeds
- combine ground beef, onion, rice, 3 tablespoons ketchup, salt, 1/2 teaspoon oregano
- and pepper in a large bowl, mixing lightly but thoroughly, spoon mix into peppers; stand peppers in a 8 x 10-inch baking dish
- Combine sauce ingredients; pour over peppers. Cover dish tightly with aluminum foil.
- Bake in 350 degree F oven for 1-1/2 hours to medium (160 degrees F) doneness until beef is not pink in center and the juices show no pink color, top with cheese of your choice.

Loved the meat filling! My only disappointment was that the stewed tomatoes washed away and lost their flavor during cooking. If you like a heavy tomato sauce, I'd recommended adding a can of tomato sauce or a lot more ketchup. See More in IMI II ...more
