Beef'n Black Bean Chili Enchiladas

    Beef And Black Bean Chili Enchiladas by Auntybea

    I had some ground beef and couldn't decide between tacos, burritos, enchiladas or Chili. So I asked my son what he felt like and gave him the 4 options. He thought for a second and said "I don't know...maybe something between a chili and enchilada?" I repeated what he said to me with a slight question as to how I would do that, he just shrugged and walked away, LOL....Well, that didn't help me much I thought so I did a quick search here, and wouldn't you know...I found a Chili enchilada! My son is a genius, lol... ;) ;)
    I made the chili a day ahead; it’s a nice thick chili. It makes a delicious chili all on its own, I would be quite happy dipping tortilla chips in that for dinner but the chili enchiladas were awesome!
    In the description, she says you can add some canned chipotles for heat, I didn't have that but I did have a can of green chilis so I used that instead.
    I was sooo happy to find a recipe that uses the exact sizes of cans I get here! That rarely happens; I usually have a little more of this or a little less of that--so I was quite excited to follow a recipe with exact can sizes!
    For the enchilada part, the ingredients are in the direction portion. You need 8 small flour tortillas and 1 cup shredded cheddar cheese. I only had large tortillas so I used 6 of them. I like that the directions give you exact measurements for how much chili to put in the dish and how much you need in each tortilla. Because I used cold chili, I warmed up the 2 cups of chili for bottom of the casserole so it was more fluid, but kept the filling portion cold to make it easier to roll the enchiladas. I used a half cup measure to fill the tortillas, but because I was using 6 large I just heaped the half cup measure with chili.
    Everyone loved them! They are quite filling and satisfying. I think if you’re cooking for less than 4 people you could split the recipe and have some chili the night you make it and use the leftovers for enchiladas the following day.
    Next time I'd like to try them with corn tortillas instead of flour, just because I love corn tortilla chips with my chili. :)
