Big Apple Cinnamon Muffins

    My Mom LOVES Muffins for breakfast. Linda and Michelle recommended these
    Big Apple Cinnamon Muffins
    and so I gave them a whirl this morning.

    I really liked the apples diced, you get a definite apple flavour coming through when you eat one. Not sure if I did something wrong, but when I mixed up the cinnamon, brown sugar and olive oil for the streusel topping it was so wet it was almost pourable. So I added more brown sugar until it was a bit crumbly. Tastes good. :)

    When I took the muffins out of the pan there was a fair amount of olive oil in the bottom of the muffin tins and I ended up placing the muffins on a paper towel before transferring them in to a freezer bag to absorb the oil that was on the bottom of the liner.

    I like Linda's idea to use whole wheat flour in them. I didn't have any but if I did I'd add it and bet it would be lovely.

    Gave one a taste test and it's a thumb's up! Mom will be happy! :)
