Cajun Gumbo

    *Made for the February 2021 Soups/Stews Recipe Challenge*

    Very, very similar to the way I make my usual gumbo! I have never out tomatoes in it before though, and I did notice while browsing recipes, a lot call for them! This one only used one tomato so I felt comfortable with trying it out. The tomato just kind of melted into the soup and we liked it! I don't care too much for chicken too much in gumbo so I used cod instead, which was delicious in this! I also doubled up on the chicken broth. Delicious recipe!!

    I love gumbo and haven't made it in a long time. I just checked the recipe I use, and it doesn't have tomatoes. I haven't ventured too far from that one recipe though, lol... It's just chicken and sausage. Now you have me wanting some, I must make it soon! ;)

I don't venture far from my gumbo recipe either so I was surprised to find this one that was so similar, minus the tomatoes, but you couldn't really taste them in this, I think they just added a slight acidity. I actually saw a lot of recipes calling for canned tomatoes, which I'm not sure we'd like. Yes, it was so good and comforting in this weather!
