Caribbean Chicken Wings

    Caribbean Chicken Wings by Minitindel

    This is just like a Jamaican Jerk chicken recipe. I used drumsticks instead of wings though, about 3lbs instead of 7lbs of wings but I kept the sauce/marinade amount the same.
    I was a wimp and cut the habanero and cayenne pepper in half, and it was still plenty spicy for me. The heat is like wasabi, hot at first but disappears in seconds. So it's not a slow burn or something that stays in your throat or anything-- which is the type of heat I don't like so this was perfect for me.
    After the initial heat you get this wonderful fruity, tangy flavour from the other ingredients. Very reminiscent of a teriyaki sauce, just a little spicy! ;)
    I thought I might have to cook the drumsticks longer but it was done in the same time listed on the recipe. 20 minutes at 350F, baste with the reduced marinade and cook at 400F for 20 more minutes. It was fall off the bone juicy chicken!
    This is far better than my regular Jerk recipe, (that recipe was much loved by two boyfriends and current husband--it was jokingly called my boyfriend catcher! LOL ;) That recipe had a similar marinade but then you just grill the chicken with no glaze. The glaze really makes this recipe! And I love the fennel seed in this.
    I served it with my cooling Cucumber Lime Salsa, and a confetti-coconut milk rice.
    My son loved the heat and said he could use more! Lol...full heat for him next time! ;)

    Beautiful color you got on them Shona!! I would have to cut back on the spiciness too just so my kids would eat them, 2 tsp. of cayenne? Yikes!! Glad it turned out great and wonderful photo :)

    Great photo Shona and nice find of a recipe! It looks like it has a lot of great flavor. I'm not a fan of wings or drumsticks but would so enjoy this with cubed chicken breast. YUM!!!
