Carrot Turnip and Potato Soup

    ~Made for November 2018's Root Vegetable recipe challenge~

    Delicious!!!
    My family said it tastes so much better than my regular Baked Potato Soup! (I didn't tell them what vegetables were in it ;) I love that this soup has no cream or dairy in it, but is super creamy just by pureeing it.
    I added a sprig of rosemary along with the bay leaf and two parsnips along with the chopped carrots to make up the cup and half called for.
    I cooked some bacon ahead of time and used the fat to sauté the onion in; and served the soup with the cooked bacon, green onions, croutons and some grated parmesan.
    I will definitely make this again and look forward to it!

    Nice photo, Cosmicmother! It looks so warm and hearty. I think turnips can really add to the flavor. I had a friend who made the best mashed potatoes. Her secret was adding a turnip. If she didn't tell, no one would ever know.

    I agree Diz, turnips (and rutabaga's) add so much flavor but you'd never know it's in there! They are an under utilized and under appreciated vegetable! ;)

    What a gorgeous bowl of soup Shona! I would LOVE everything in this, not sure if I could get away with the turnips with the family, or if they would even like pureed soup, but I could make this for myself!! Luisa's recipe looks yummy too :)
