This was surprisingly delicious! Devoured by the family! They were very disappointed that there wasn't any seconds! (It fed 4 of us)
All I had for the 2 cups of frozen mixed vegetables were peas and broccoli, so I used a 1/2 cup of fresh carrot and a 1/2 cup of fresh yellow pepper--finely diced---And a 1/2 cup of frozen peas and 1/2 cup of frozen broccoli florets that I thawed and finely chopped-- so all the veg was roughly the same size. The vegetables added a lot of flavour to the rice. (I took a tip from the Campbells website for this recipe and made sure to thaw the frozen veg before baking)
I used the onion powder and black pepper, but also added a little garlic powder. (She lists alternatives to the spices and cheese etc.) Since the recipe says to season the chicken to your liking, I used the same spices, onion, garlic and pepper and also added a teeny bit of salt and some Italian herbs.
The bake time and temp. was spot on. The rice was perfectly cooked. No uncooked pieces of rice hiding anywhere, no mushy rice either. Just perfect! Creamy from the soup and lots of flavour! I really don't think it needs any cheese, but of course kids love cheese! Parmesan would be great as listed in the variations, or the Mexican version with Jack cheese etc..Lot's of good ideas posted on the recipe page.
I love that this recipe is so easy, no need to precook anything, perfect for a busy weeknight. And delicious too! :)
(It was dark in my kitchen last night, forgive the highly edited pictures that I had to lighten! The cheese really isn't that neon looking, Lol ;)

Great photos, Cosmicmother! I especially like the plated one that shows the rice. It looks so creamy. I'm not a huge rice fan. However, I love a good creamy rice that has lots of vegetables.

I love how your chicken sits right on top of the rice perfectly in the casserole dish :) I don't think your cheese looks neon, the pictures lightened up nicely!

Wonderful photos Shona! I like the idea of adding veggies to the rice. I love what baking rice with a creamed soup mixed in, it becomes "risotto" like and I could eat just it and be happy.

That's what my kids wanted too Linda, the rice. They would have been happy if I doubled the rice and left out the chicken. ;)
