Cherry Almond Bread

    Cherry Almond Bread by Henrie

    I love anything Cherry-Almond flavoured, and this is delicious! There's just something about that flavour combo that screams "Christmas" to me. :)
    It's very moist and dense, similar to a pound cakes' texture. And full of flavour. I needed to bake it a little longer than 60 minutes, so it developed a thicker crust. I'd like to try and bake it at a lower temperature for longer and see if it that helps--it might just be that I over-mixed the batter or that I'm at a higher altitude (3500ft)? But in any event it was still delicious and the whole family loved it!
    I think a little dusting of powdered sugar would be nice on top, however I decided to go with an almond glaze. I saved a tablespoon of cherry juice from the jar and used that with some water, powdered sugar and almond extract to make a glaze and topped it with sliced almonds.
    Perfect as-is for a breakfast loaf, but nice enough with the glaze to be served as dessert!

    (Hopefully Santa brings me a tri-pod for Christmas, I developed a tremor in my left hand and can't hold my camera steady anymore, all my photo's are shaky or out of focus!)

    Awesome photos, Cosmicmother! Your bread looks so festive and perfect. I agree with you about the combination of cherry and almond. It's kind of like peanut butter and chocolate. I'm sorry you've developed a tremor. I have a fine tremor in my right hand. It's not noticeable until I try to do something tedious like decorate cakes or cookies or plug in my phone to recharge it. I'll keep my fingers crossed that Santa gets you a tri-pod. Your photos look beautiful to me. :)

    Diz, that's how mine is too, I really only notice it when I pick up the camera and it keeps flashing the red shaking symbol at me, lol...it gets worse when I use the zoom so I have to stand really close to the food and take many photos and pick the least shaky one! ;)
