Chewy Chocolate Coconut Blondies

    Made these for my SIL who loves chocolate. Thought these would please her, and they did.

    Had company coming over for tea this morning so wanted to bake something quick and easy that called for ingredients I'd already have in my pantry. This fit the bill perfectly. They came together in no time. Liked that Shona said to pull them out when they're just, just done and they'll keep cooking in the pan and turn out chewy. They did. Nice flavour. Loved the coconut. Next time I make it I think I'll try butterscotch chips instead of chocolate. The only trouble with this batch is that I forgot to send some home with our guests and now I'm eating the entire tray of what's leftover!!!! First world problems. :)

    I don't know why I didn't have this recipe bookmarked! It is now though, Bri and I will love these :) Butterscotch chips are a great idea Janet, I bet they would go great in these. Lol at having to eat the whole tray, maybe they would freeze okay? :)

    Oh my gosh, I don't know how I missed this review before now! Those look super yummy, Manella! I've had the recipe saved for some time now and need to make them. I even have coconut on hand, something I seldom do, so have everything I need :)
