Ingredients

How to make it

  • Preheat the oven to 350f. Line an 8x8" pan with foil or parchment paper. Over hang two sides so the bars can be lifted out easier.
  • Stir sugar into the melted butter, let cool a minute while you whisk the dry ingredients in a separate bowl.
  • Lightly beat the egg and vanilla into the butter mixture. With a spatula, stir in the flour mixture a little at a time. Just before the flour is all incorporated, fold in the coconut and chocolate chips.
  • Pour into the prepared pan, using the back of the spatula to push the dough into the corners of the pan, making sure the batter is spread evenly.
  • Bake for approx. 22-25 minutes, a cake tester will come out clean or have moist crumbles in the center. Careful to not over bake, or the chewy bars will become dry crunchy bars! I like them just underdone in the center as they continue to cook in the pan once out of the oven.
  • Let cool for at least 30 minutes, them remove from pan and cut into 16 squares.
