Chewy Chocolate-Coconut Blondies

- 1/2 cup of unsalted butter, melted shopping list
- 1 cup lightly packed brown sugar shopping list
- 1 egg shopping list
- 1 tsp vanilla extract shopping list
- 1 cup flour shopping list
- 1/4 tsp baking soda shopping list
- 1/4 tsp fine sea salt shopping list
- 1 cup pure semi-sweet chocolate chips ( or for extra decadent treat use a good quality milk chocolate chip) shopping list
- 3/4 cup of Unsweetened, desiccated coconut, medium or fine cut shopping list
- *If your looking for Mounds/Bounty bar flavor, try using sweetened flaked coconut with a little coconut extract. shopping list
How to make it
- Preheat the oven to 350f. Line an 8x8" pan with foil or parchment paper. Over hang two sides so the bars can be lifted out easier.
- Stir sugar into the melted butter, let cool a minute while you whisk the dry ingredients in a separate bowl.
- Lightly beat the egg and vanilla into the butter mixture. With a spatula, stir in the flour mixture a little at a time. Just before the flour is all incorporated, fold in the coconut and chocolate chips.
- Pour into the prepared pan, using the back of the spatula to push the dough into the corners of the pan, making sure the batter is spread evenly.
- Bake for approx. 22-25 minutes, a cake tester will come out clean or have moist crumbles in the center. Careful to not over bake, or the chewy bars will become dry crunchy bars! I like them just underdone in the center as they continue to cook in the pan once out of the oven.
- Let cool for at least 30 minutes, them remove from pan and cut into 16 squares.
