Chicken Vegetable Soup With Pasta

*Made for the February 2021 'Soup/stew' Recipe Challenge*

Shonda's vegetable soup post had me craving it but I had leftover chicken that needed to be used up and found this. I had to tweak it some for what I had on hand. Like I said, I used leftover chicken so I added some chicken bouillon to the broth since I didn't make a stock with raw chicken. I used spinach instead is swiss chard and kept all the veggies whole, not making the puree, but I will try it that way next time for sure! Turned out delicious and just what I was looking for, yum!

That looks good Michelle! I think I browsed that soup a couple times too! I think the leftover chicken and bouillon is just as good and much easier and quicker.
The puree does sound interesting, never seen that in a chicken soup. Something different to try! :)

Thanks Shona! I made the mistake of not reading through the recipe before I started making it so when I saw to "puree" it I was already behind on time and just skipped it. I do think it would have made the soup a great texture and want to try it that way next time!
