Chinese Pork Ribs

    ***April 2019 Group Recipe Challenge--The 3 P's***

    These have a really different flavor than what you would expect. By appearance, you think it's going to have a BBQ taste. Actually, they have no flavor other than an occasional hint of orange marmalade. I liked the plain taste. Hubby on the other hand felt they needed something. He went for his standard pick me up--Franks. lol! What I liked about the recipe was that it was easy and yielded moist, juicy/saucy, fall apart ribs. I don't like cooking meat in a crockpot so I baked these in the oven. Put in a pan, covered with foil, and baked at 250 for 2 1/2 hrs. I think I had approx. 3lbs of ribs. I did thicken the pan juices with cornstarch and drizzled over the top of the ribs.

    I could see how a little spice would jazz it up, but probably better to add it afterwards for individual tastes. ;)
    I love orange with pork, I wonder if a little vinegar would perk it up a bit--balance out the sweetness perhaps? Good tip on cooking in the oven, I think I'd prefer that too. :)

    Cosmicmother--Thank you! It wasn't as sweet as you would think with the ketchup and orange marmalade. In fact, I was thinking it needed more ketchup. Maybe a combination of more ketchup and some vinegar would be a great help.

I like that this recipe has so little ingredients, I'm surprised they tasted pretty plain with such flavor punch ingredients. I haven't cooked with orange marmalade in years, I may have to give this one a try!!

    Thank you, Mommyluvs2cook! I'm thinking the flavor loss comes from all of the excess juice and fat that cooks out of the country style ribs. The recipe makes just over 1/2c of sauce and there was somewhere between 2 to 2 1/2 cups of juice in the pan when they were done. Maybe they wouldn't release so much liquid if cooked in a crockpot ??

    Thank you, LindaLMT! I used to love cooking in my "old" crock pot. It seems like the new crock pots cook much hotter. Now I mostly use them to keep food warm at pot lucks.
