This cookie put a BIG smile on my face! I LOVE coconut and what better way to use it than in a chocolate chip cookie?! :) These are perfect! I gave most away, but kept a few for us. It was hard for hubby and I to stay out of them and hubby isn’t really a cookie person. I made a few changes due to items on hand. The recipe calls for 16oz of chocolate chips, but I used a standard size bag which is approx. 12oz. I didn’t want to open a second bag and have a partially used bag sitting on the shelf. The cookie had plenty of chocolate chips even with smaller amount. Because I had a package of sweetened coconut already open with about a half a cup of remaining, I just dumped it in. I figured it would make up for the chocolate chips. Out of habit I added 1 tsp. of vanilla and 1 tsp. of cinnamon for extra flavor. I baked right on the edge of 9 – 10 minutes. Nice and crispy on the outside. Soft ‘n chewy on the inside. Thank you, Eastcoaster, for sharing your recipe! This is my new favorite cookie!

Manella, you are very welcome! It's easy to write good reviews for great recipes. :) If I think back 30 - 40 yrs, a bag of chocolate chips were 16oz. I've noticed a trend in the last few years where companies are reducing the size of their packages by just an ounce or two, yet still charging the same price.
