Ingredients

How to make it

  • Preheat oven to 375°, Greece or line a cookie sheet with parchment paper.
  • Cream together the butter,white sugar ,brown sugar and eggs
  • Beat until glossy about 4 to 5 minutes
  • Add flour, baking soda and the rolled oats , salt and mix
  • Add coconut and chocolate chips stir until all is mixed in
  • Drop by tablespoons full or a medium ice cream scoop on to the cookie sheets about 1 inch apart
  • Bake on The middle rack of oven 9 to 12 minutes
  • Cool on cookie sheets for a few moments then transfer to a wire rack to cool completely
  • Notes::
  • I use my stand mixer to make these cookies. They freeze well. I'm lactose intolerant so when I make these for us I use Earth balance spread or Becel lactose vegan free margarine. I have also made these cookies with Craisins in place of chocolate chips.

    I only made half the recipe and still got 31 cookies! The coconut added a nice chewy texture and subtle flavor, yet didn't overwhelm the other ingredients and we could still taste the individual flavors of the chocolate and oatmeal. I also added 1/4 tsp. of Penzeys double strength vanilla just 'cause we like the richness it adds to baked goods. All together, they added up to a yummy cookie that we really enjoyed!     Absolutely wonderful. They just came out of the oven and I couldn't wait to try one. Crispy on the outside and chewy on the inside. I love the addition of the coconut. They are not going to last long!!! Thanks so much Manella for sharing your great recipe.
