    Recipe made for IMI2's April 2020 "Pantry Staples" recipe challenge.
    Cobbs Brown Derby Salad Dressing

    My review: This is a great dressing. Somehow a little different of a vinaigrette than what I normally find and make, I think it's the addition of dry mustard. I really like it. It's got a nice little twang but is not overpowering. I can see this being ideal on a Cobb Salad.

    Great photo Linda, the dressing sounds tasty! It's almost like my Caesar salad dressing except I use white wine vinegar instead of red, and of course add a dollop of mayo. But identical in everything else, so I know I would love it! :)

    Sorry Linda, I don't have it written up unfortunately. I've been making it for over twenty yrs and I just eyeball and taste as I go. Very similar to this, although I would sub most of the oil for mayo (but not nearly 3/4 cup, more like a 1/4 cup mayo and drizzle enough oil in until it's a thick dressing consistency) I don't like anchovy or the paste so I never use that, but that's why I use Worcestershire sauce-- like this dressing has. And when I toss the salad I add the parm to that with plenty of black pepper rather than add it to the dressing. I would have to work on the dressing for some time if I plan to measure and write it out, lol..But I may just do that soon so my kids have the recipe too, they love Caesar salad!

I started using the vinegar a few yrs ago and like it better than all lemon juice. (Lemons can be so inconsistent in acid and flavour!) And sometimes I only use vinegar if out of lemons and it's still good! (of course I leave out the anchovy paste ;)
