*Made for the May 2018 Salad Recipe Challenge*

This is a delicious, refreshing little salad!! I could have eaten it by the spoon full, which I did a few bites, but ended up eating with tortilla chips also :) The only change I made was to use yellow onion instead of purple, just because I didn't have it, but I know the purple onion would have been better. The lime zest is a must, adds a nice zing! I think this would be great on fish tacos, or made into a quesadilla, or even a side to steak or chicken. Great recipe Janet!!

Mmmmmm.....this looks good! I'm going to make it when hubby isn't around (he doesn't like corn and I have some taking up room in the freezer that I need to get rid of). Thanks for the inspiration! Every time I think of Paula Deen I remember her on "Dancing with the Stars." Lovely pic! :)

Thanks everyone! I'm definitely using it in some sort of tacos next! Frozen corn would work great Mrs.J, that's what I would have used if I hadn't had a cob left over from last nights dinner :)
