Corn,avocado And Tomato Salad

Got this recipe off of the Food Network site, courtesy of Paula Deen. It is soooooo good! Fresh and summery tasting! Three of us pretty much polished off the bowl as part of dinner this evening. Great recipe! I had a couple of cobs of corn left over from the other evening that I had steamed in the microwave. Ingredients
- 2 cups cooked corn shopping list
- 1 avocado, cut into cubes shopping list
- 1 pint cherry tomatoes, halved shopping list
- 1/2 cup finely diced red onion shopping list
- Dressing: shopping list
- 2 tbsp. olive oil shopping list
- 1/2 tsp. grated lime zest shopping list
- 1 tbsp. fresh lime juice shopping list
- 1/4 cup chopped cilantro shopping list
- 1/4 tsp. salt shopping list
- 1/4 tsp. freshly ground pepper shopping list
How to make it
- Combine the corn, avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in a measuring cup, pour over the salad and gently toss to mix.
- Enjoy!

This sounds so refreshing and with fresh corn and cheery tomatoes and cilantro from the garden and lime's and avacodo's are in season in FL so get my Niece to send some up Yeaaaa cannot wait to have this!!
