    Corn And Cheddar Muffins

    This is a fantastic recipe. Easy and quick to pull together and would be perfect for a quick muffin on a busy day. I used frozen corn that I had defrosted before adding to the batter. DH said that he would love to have them again.

    And yes, Gourmetana, corn muffins make a great breakfast. At least around my house where my husband puts honey on leftover cornbread.

    Hi Gourmetana I agree with Bakerme they would be great for breakfast. I had put a few in the freezer and pulled them out a couple of days later and they were still just as good as the day I made them. Thank you for sharing your wonderful recipe.

    Yes Ml2c they do. I had frozen 6 so that I could use for the next time I had either a chili or that type of dish. However I pulled them out a couple of days later and they were just as good as the day I made them.
